Early morning flight to Chicago making my way to Santa Fe for some New Mexican enchiladas, prepared flat and layered with a fried egg on top. I like it smothered with red chile. Cold beer is the proper pairing. Since it's almost holiday time maybe I can find authentic biscochitos... Pics to come.
